Ingredients

3-4 c. watermelon, bite-sized cubes

1 ½ - 2 c. cherry tomatoes, sliced/diced (or diced fresh tomato)

2 c. cucumber, diced

¼ c. red onion, diced
-
¾ c. olives, pitted (Kalamata or Green)
-
5-6 sprigs of fresh mint/basil (or both)

Rosebud’s Chili Lime Smoked Salt, to taste
-
Balsamic Vinegar, drizzled
-
2/3 c. feta cheese, crumbled
Directions
Prepare the watermelon, tomatoes, cucumber, red onion, and olives.
Stack the mint/basil leaves together and then slice into thin strips.
Gently toss together all prepared ingredients in a large bowl.
When serving, top salad with Rosebud’s seasoning, Balsamic Vinegar, and cheese. Enjoy!
Recipe Note
Play with the ratios of fruit to veggies to your preference.
Rosebud's Sassy Salt or Jane's Italian could work in the recipe in substitute of the Chili Lime Smoked Salt.
Salad should keep in the fridge for about a week unseasoned, but you may have to drain the watermelon juices (add the juice to a smoothie or sparkling water!)
