Turkey Potato Chowder

Ingredients

  • ½ c. bacon, diced

  • 2 Tbsp. Rosebud’s I LOVE Onion

  • 1 c. celery, diced

  • 1 ½ lbs. yellow potatoes, diced into 1-inch cubes

  • ½ c. all-purpose flour (or Ella Bella All-Purpose Flour)

  • 3 qts. turkey/chicken stock

  • 1 lb. boneless turkey meat, diced

  • 2 c. frozen corn

  • 2 Tbsp. Rosebud’s Sausage Mix

  • 1 qt. half-and-half

  • ¼ c. fresh parsley, chopped (garnish optional)

Directions

  1. In a large pot over medium heat, cook and stir the bacon until it starts to brown.

  2. Add in the celery and sauté for 3-4 minutes.

  3. Add the potatoes; stir. Mix in the flour until well coated. Add in the I LOVE Onion and I LOVE Garlic and stir.

  4. Slowly add in all the chicken/turkey stock. Continue stirring, allowing the soup to come to a boil, then reduce the heat to a simmer.

  5. Stir in the turkey, corn, sage, thyme, salt, and half-and-half.

  6. Simmer until the soup is thick and creamy, and the potatoes are tender. Serve and top with parsley. Enjoy!
