Ingredients
-
1 lb. ground meat (beef, pork, chicken, etc.)
-
1 Tbsp. Rosebud’s Chorizo

1 lb. you choice of pasta (elbow, cavatappi, fusilli, etc.)

1 ½ c. green peppers, diced
-
1 jalapeno pepper, de-seeded & diced (optional)
-
1 medium onion, diced
-
2 Tbsp. butter/tallow/oil
-
1 c. salsa
-
2 Tbsp. Rosebud’s Southwest Ranch
-
1 lb. cheese, shredded (cheddar, gouda, monterey jack)
-
splash of milk, if needed
Directions
In a skillet, mix the chorizo seasoning with the ground meat and brown until done and set aside.
In a large pot, heat water to a boil. Pour in the pasta and cook according to the package, or until tender. Drain and set aside.
In the same pot, add your butter, peppers, and onions. Saute ove medium heat until they soften and start to brown.
Add in the meat, pasta, salsa, and Southwest Ranch seasoning. Stir well.
Add in the shredded cheese and stir to melt the cheese and combine. If the mixture seems dry, add a splash of milk and stir.
Serve hot and enjoy!
Recipe Note
Store leftovers in an air-tight container in the fridge for up to a week.
Use any veggies or cheese your heart desires! Try out some diced zucchini, garlic, mushrooms, spinach, kale, corn, peas, or even black beans.
