Lemon Pepper Shrimp Salad

Ingredients

1 lb. shrimp, shelled and deveined
-
1 c. olive or avocado oil
-
1/2 lemon, juiced
-
1-2 Tbsp. Rosebud’s Lemon Pepper
-
arugula or salad greens of your choice
-
1 pint of cherry tomatoes, halved
-
half red onion, thinly sliced
-
any other thinly sliced vegetables, optional (radishes, cucumber, red pepper, etc.)
- 1 container of feta cheese
-
croutons, if desired
Directions
In a jar with a lid, combine oil, lemon juice, and lemon pepper seasoning. Mix/shake/combine well and set aside.
In a large ziploc bag or bowl, pour half of the lemon oil mixture over shrimp and shake or toss to coat shrimp. Place in the fridge and allow to marinate 30 minutes to an hour.
Use the other half of the marinade to lightly toss with salad greens reserving half to drizzle when serving.
Assemble salads with vegetables and feta cheese.
If grilling, skewer the shrimp and grill until no longer translucent. If cooking on stovetop, place shrimp with marinade in a skillet, and cook 5-7 minutes on medium-high heat until shrimp is cooked through.
Remove from heat serve shrimp over salad and dress with remaining dressing. Enjoy!
