Ingredients

1 Tbsp. avocado oil

12 ears of sweet corn

4 oz. fresh mozarella or soft goat cheese

1 small bunch of basil, fresh

1 pint cherry/grape/small tomatoes

2 Tbsp. Rosebud’s Jane’s Italian seasoning
-
balsamic glaze, optional for garnish
Directions
Shave the corn kernels from ears and saute in a medium skillet with avocado oil (about 5-7 minutes).
Season with Jane’s Italian immediately, then let cool.
Slice the small tomatoes in half and slice the basil leaves into thin strips. If using fresh mozzarella, cut into bite-sized pieces.
Combine cooled corn, tomatoes, basil, and cheese until well mixed.
Drizzle with balsamic glaze for garnish or toss gently.
Serve immediately or chill to serve later. Enjoy!
