Toss the walnuts in a food processor until chopped. Add in your pitted dates with a small splash of water and pulse until combined.
Add walnut and date mixture to a large bowl, along with the rest of the ingredients and stir until combined and sticky. The mixture should hold together when pressed.
Press into an 8x8 dish lined with parchment paper. Let set in the freezer for 30 minutes (or 1 hour in the fridge).
In a medium bowl, combine the frosting ingredients and beat using a hand mixer until smooth and creamy.
Remove the bars from the freezer/fridge and lift out of the dish by grabbing the parchment paper. Spread the cream cheese frosting evenly on top.
Place back into the fridge for 1-2 hours or until fully set. Slice into 9 bars.
Store in an air-tight container in the fridge for up to a week.
