Peach Salsa Salad with Rosebud's Guaca Salsa Mix

 Ingredients
   2 large peaches (nectarines or mangoes work great too!)
   1 can black beans, drained and rinsed
   1 C diced cucumber
   1 C diced tomato
   1 C diced soft mozzarella or Mexican cheese like cotija or queso fresco
   1/2 C. diced red onion
   1/4 C fresh cilantro
   1 - 2 Tbsp. Rosebud's Guaca Salsa  (the more you add the warmer it gets)
   1/4 C. Persian Lime Olive Oil
   
1) Mix all diced ingredients
2) Add olive oil and Guaca Salsa Mix - start with 1 Tbsp and let it sit for a bit so that the dried spice mix can reconstitute, then add more if desired.  The heat will increase as the mixes reacts with the juices from the produce.  Add sea salt or Rosebud's Sassy Salt if you need more flavor without more heat.
Serve with tortilla chips or eat by itself and don't forget the Margarita!
